query: International Health Organizing, and illiterate peoples' organizing?

Hello!  I was wondering if anyone on this list knows of:

1) Any international health organizing projects?  Other than
some work that ACORN does in South America, I have found very few.
2) Any domestic health organizing groups in francophone countries?
3) Any teaching materials about organizing that are visually-based or
designed for populations with extremely low (as in 10%) literacy?

I co-founded and direct the Mali Health Organizing Project.
So far our organizing trainings have been with populations that have
at least 50-60% literacy (our community committees), but we want to
start teaching organizing as well as health education in peoples homes
(eg, about 2000 people, almost none of whom are educated at all or
literate).  We teach health using these visual flashcards that tell a
story.  We are thinking about doing to same for organizing.

 I would love to see how people have done this.
